Sunday: Simple Laotian Pumpkin Mushroom Soup

Thanks to a friend in Laos who kindly reminded me to post something new and my sister who liked her status on Facebook. Anyway, I'm sure I'm not the only who dislikes the new feature on FB, yeah? Yep, I have a love/dislike relationship with FB now.

The last few days I was caught up with the crisis of other people being effected by the flood in Northern Thailand which our church had gather funds, donate necessary things to distribute. Then there was the 6.8 magnitude earthquake that hit the northern state in India, Sikkim, and including the district we used to live in Siliguri. Our thoughts and prayers are with those who are rebuilding their lives and houses that's been destroyed.

Isn't that all a part of living this life.
But this verse in Hebrews 12:8 "Therefore, receiving a Kingdom that can't be shaken, let us have grace, through which we serve God acceptably, with reverence and awe,"


One day when we're with Jesus in His Kingdom it's unshakable, that's peace!


Anyway, we have to live on right? And continue with this Sunday Soup thing which I made for dinner. So simple and healthy. This soup was mentioned from a friend to a friend who made it for her in Vientiane. How she oooohhed and ahhhhed about it. I think the secret is the lemon basil leaves that you put in at the end. Following is the recipe and I just eyeball everything.

Simple pumpkin mushroom soup with pork ribs
Eyeball how much water you put in for your pork stock with pork ribs, throw in slightly
crushed green chili, garlic and shallots, boil about five more minutes. Then put in sliced
pumpkin and mushroom, boil for another 8 minutes, tasted to season with chicken granules, salt or
fish sauce. Lastly, throw in lemon basil, bai mang rak in Thai or bai ee tu in Lao. This soup is a main dish and we ate it with rice.

Had watermelon and papaya for dessert and yes, this is how I eat it when I don't have to share, lol!
