Chicken Tortilla Soup With Cornbread

Thai-Lao Dessert


Yesterday evening we got back safe and sound to Bangkok! It's nice to be back home in your own bed even with the wonderful boutique hotels that my husband spoiled me with. I should stay put and not do any more flying now by doctor's order. I get a lot of of that from the doctor, no coffee, no walking to much, NO coffee, yes I hear ya. But, there was 'no cooking'! Of course not.

So this brings me this so tasty chicken tortilla soup minus the tortilla that we didn't have on hand. The cornbread balances out the spiciness of the soup which was perfect. This was my first time making this soup and got the recipe from here. I left out hominy as we didn't have any and the rest of the toppings but added cheddar cheese instead, also added cumin powder, taco seasoning, chili powder, left over grilled chicken mostly leg parts and chicken stock to my taste. It serves 8 but we ate half of it.

Our neighbor gave us her homemade local dessert of boiled banana in coconut milk and cream. I'm beginning to like this dessert again as I haven't had it for a long long time.
